Sesame Ginger Cabbage Salad
- 1 1/2 cup shredded green cabbage • 1 1/2 cup shredded red cabbage
- 1 cup shredded organic carrots
- 1/4 red onion, thinly sliced
- 4 tangerines/clementines, sectioned • 1 cup fresh cilantro leaves, chopped
Dressing
- 1/4 cup fresh lime juice
- 2 Tbsp diced shallot
- 2 Tbsp raw organic honey
- 1 tsp raw organic apple cider vinegar
- 1/4 tsp ground or 1 tsp freshly grated ginger • 1/4 tsp sea salt
- 1/2 tsp of toasted sesame oil
Method
Combine all the salad ingredients in a large bowl and toss well. Combine all the dressing ingredients into a small food processor, and blend until completely smooth. Adjust flavours to taste. Add dressing to salad ingredients and toss to coat well. Allow to marinate for at least 30 minutes in the fridge before serving. Leftovers will keep in the fridge for three to four days.
