Zucchini Soup
Zucchini Soup
- 400g zucchini, washed and finely diced
- 3 dl organic broth
- 2 cloves of minced garlic
- season with pepper, salt, turmeric
- optional: coconut milk and coriander
Step one:
In a medium pot add good quality coconut oil and fry garlic until soft. Season with your preferred spices.
Step two:
Introduce zucchini and fry for about 5 minutes. Add the stock and let it simmer for about 20 minutes.
Step three:
Remove from heat and with a hand blender mix to a liquid soup.
Add coconut milk and simmer for another 2 minutes, garnish with fresh herbs.
